Cobb Salad with Whole Wheat Croutons and Mustard Vinaigrette

Crispy bacon and peppery radicchio are just two of the major players in this ensemble cast, alongside crunchy, homemade, whole-wheat croutons and a tangy vinaigrette, in this all-star salad.

Salad

Ingredients

1 head radicchio lettuce, chopped

1 head romaine lettuce, chopped

2 boiled eggs, quartered

4 strips crispy bacon

1 medium heirloom tomato, diced

1 avocado, peeled, cored, and sliced

1 spring onion or leek, thin sliced

Method

Toss together in a large bowl

Croutons

Ingredients

1 small whole wheat baguette, sliced and diced into .5” cubes

2 T olive oil

2 cloves garlic, minced

1 T coarse sea salt

Method

In a large bowl, toss the cubed bread with the olive oil, garlic and salt, then bake at 400ΒΊ for 8 to 10 minutes until crunchy.

Dressing

Ingredients

4 T extra virgin olive oil

2 T balsamic or red wine vinegar

1 T fresh squeezed lemon juice

1 T Reyes Dijon mustard

1 clove garlic, minced

.25 t sea salt

fresh ground black pepper to taste

Method

Whisk ingredients together in a medium bowl, serve immediately. If the dressing sits, whisk again before using.
